One of the specialties, the Filipinos have inherited from the Spanish colonizers, the Afritada. It 'good that a rich stew made with potatoes and pork, usually dipped in tomato sauce thickens.
Ingredients:
Liempo or 750 g of bacon (cut into cubes 2 x 2)
250 grams of potatoes
3-4 pieces tomatoes (coarsely chopped)
? cup frozen peas, fresh (thawed)
2 green or red pepper
1 whole garlic (chopped fine)
2 large onions
2Carrots
2 bay leaves
? cup tomato sauce
? teaspoon dried oregano
? teaspoon dried rosemary
? teaspoon dried basil
6 tablespoons olive oil
2 cups beef broth
Preparation:
Heat the oil in a heavy pan, olive oil. Add the diced pork, when the oil is hot. Go to the boil until the edges of the meat starts to turn brown. to expire placed under high heat until the fat begins.
When the flesh is browned, remove theexcess oil from the meat.
Add the bay leaves, garlic, tomatoes and tomato paste. Mix well. With salt and pepper for seasoning.
Pour the broth into the pan and mix well. Simmer with lid on for about 15 minutes.
Add the vegetables to cook stew and mix well. Then add, rosemary, basil and oregano. Cover the pan and cook for about 25 minutes or until the meat and vegetables are cooked thoroughly. More broth may be added, but note that athick and rich sauce makes a better Afritada.
Add the peas and cook for an additional 2 to 3 minutes.
Serve hot.
